Just got home from grocery shopping and putting everything away, packing up food from last week that needs to be frozen. I enjoyed a yummy Tomato garlic basil bacon bisque from Campbells and a grilled cheese on sunflower honey wheat bread. I have no idea where this lunch has been all my life but it will definitely be a staple now. We are trying to be healthier and I am trying to eat 3 meals a day with a small snack that is so much easier said than done since I really do not get hungry and I have a hard time forcing myself to eat that being said I got some healthy snack/meals to start incorporating into my daily routines. So that on most days I will start to consume the appropriate amount of calories 1200 and hopefully loose some weight in the process of being healthier!!
Snacks:
- Fresh Mozzerella, Roma tomatoes, Balsamic Vinegar - can add fresh basil if you like
- Spinach Dip with carrots and celery-Knorr's Vegetable Dip modified to suite your taste ( the second batch I sauteed the spinach with onions, garlic, salt and pepper and added a few green onions to the mix)
- Tomato basil soup/bisque
Recipes:
- Pot Roast- Crock Pot
- North Woods Turkey, Rice and Veggie Soup- Crock Pot
- Farfalle(pasta) with roasted garlic, tomato, onion and chicken in creamy sauce
- Spinach and Cheese Enchiladas- Can use goat, feta, sharp white cheddar or whatever you like
- Rueben Rolls(in egg roll wrappers) with Thousand Island Dip (this was a separate posts)

I do try and make almost all of the things we cook healthier in any way I can without sacrificing taste.
